Light and Fluffy Baked Apple Pancake
It was sooooooo good! We used Granny Smith apples, which I definitely recommend. No maple syrup either, so we used regular, but it was still tasty. I also added a little vanilla.
Sorry that one is blurry. And also this formatting is horrendous. It looks one way when I write it out and then develops a mind of its own. Hopefully you get the idea: this recipe = awesome.
Other than a new year, things here are still about the same. Except our fur baby has been especially lovey lately. She is following me more than usual. She is next to me right now, actually! I don't mind. :)
